1 large onion, diced 1 large green bell pepper, diced 1 pound of smoked sausage, cut in slices 1 tablespoon of olive oil 4 cups of chopped cooked chicken 3 cups of uncooked rice 2 (10 and a half ounce) cans of French onion soup (do not dilute) 1 (14 and a half ounce) can of chicken broth 1 (14 and a half ounce) can of beef broth Creole seasoning (about 1 teaspoon) 2 or 3 dashes of hot sauce
Steps:
(1) Saute' first three ingredients in hot oil in a Dutch oven 4 to 5 minutes or until sausage is browned.
(2) Stir in chicken and the rest of the ingredients.
(3) Cover and bake at 350 degrees for 40 minutes, stirring after 30 minutes.
(4) Garnish with fresh cilantro sprigs if desired. |
